- Parmesan cheese - 1/4 cup, grated
- Black pepper - 1/4 teaspoon
- Salt - 1/2 teaspoon
- Garlic powder - 1 teaspoon
- Italian seasoning - 1 tablespoon
- Olive oil - 2 tablespoons
- Eggplant - 1 large
Let's Get Started
- Preheat the air fryer to 375°F.
- Cut the eggplant into 1/2 inch thick rounds.
- In a small bowl, combine the olive oil, Italian seasoning, garlic powder, salt, and pepper.
