- Salt and pepper - To taste
- Sriracha - 1 tablespoon
- Soy sauce - 2 tablespoons
- Carrot - 1, julienned
- Cucumber - 1, julienned
- Avocado - 1, sliced
- Eggs - 4
- Nori sheets - 2 sheets
- Sushi rice - 1 cup, cooked
Let's Get Started
- In a small bowl, whisk the eggs with salt and pepper.
- Heat a non-stick skillet over medium heat and scramble the eggs until cooked through.
- Lay a nori sheet on a clean surface and spread half of the sushi rice evenly on top, leaving a border at the edges.
- Place half of the scrambled eggs, avocado slices, cucumber, and carrot in a line across the center of the nori sheet.
- Drizzle with soy sauce and sriracha.
- Roll the nori sheet tightly, tucking in the filling as you go.
- Repeat the process with the remaining ingredients to make the second burrito.
