Let's Get Started

  1. Heat the vegetable oil in a large pot over medium heat.
  2. Add the chicken thighs and cook until browned on all sides. Remove from the pot and set aside.
  3. In the same pot, add the onion and garlic and cook until softened.
  4. Add the curry powder and cook for another minute.
  5. Return the chicken to the pot and add the potatoes. Cover with water and bring to a boil.
  6. Reduce the heat and simmer for 30 minutes, or until the chicken is cooked through and the potatoes are tender.
  7. In a separate pot, boil the eggs until hard, then peel and set aside.
  8. Serve the chicken and potatoes with a piece of roti flatbread and a boiled egg.
