Surinamese Roti
Surinamese Roti is a popular dish from Suriname, consisting of curried chicken, potatoes, and boiled eggs, served with flatbread.
Ingredients - Serves 4
- Salt and pepper - To taste
- Vegetable oil - 2 tablespoons
- Onion - 1, chopped
- Garlic - 2 cloves, minced
- Curry powder - 2 tablespoons
- Roti flatbread - 4 pieces
- Eggs - 4
- Potatoes - 4, peeled and cubed
- Chicken thighs - 4, boneless and skinless
Let's Get Started
- Heat the vegetable oil in a large pot over medium heat.
- Add the chicken thighs and cook until browned on all sides. Remove from the pot and set aside.
- In the same pot, add the onion and garlic and cook until softened.
- Add the curry powder and cook for another minute.
- Return the chicken to the pot and add the potatoes. Cover with water and bring to a boil.
- Reduce the heat and simmer for 30 minutes, or until the chicken is cooked through and the potatoes are tender.
- In a separate pot, boil the eggs until hard, then peel and set aside.
- Serve the chicken and potatoes with a piece of roti flatbread and a boiled egg.
