Supplì al Telefono are delicious Italian rice balls filled with mozzarella and served as an appetizer.
Ingredients - Serves 4
- Vegetable oil - For frying
- Salt and pepper - To taste
- Breadcrumbs - 1 cup
- Eggs - 2, beaten
- Mozzarella cheese - 1 cup, cut into small cubes
- Tomato sauce - 1 cup
- Onion - 1 small, finely chopped
- Olive oil - 2 tablespoons
- Arborio rice - 1 cup
Let's Get Started
- Cook the Arborio rice according to the package instructions, then set aside to cool.
- Heat the olive oil in a pan over medium heat. Add the onion and cook until soft.
- Add the tomato sauce to the pan and simmer for 10 minutes.
- Stir the cooked rice into the tomato sauce, then season with salt and pepper. Allow the mixture to cool.
- Take a small amount of the rice mixture and flatten it in your hand. Place a cube of mozzarella in the center, then shape the rice around the cheese to form a ball.
- Dip each rice ball in the beaten eggs, then roll in the breadcrumbs to coat.
- Heat the vegetable oil in a deep fryer or large pot to 375°F.
- Fry the rice balls in batches until golden brown, about 4-5 minutes. Drain on paper towels.
- Serve the Supplì al Telefono hot, with extra tomato sauce for dipping if desired.
