Stumptown Coffee Cake

- Chopped nuts - 1/2 cup
- Cinnamon - 1 teaspoon
- Brown sugar - 1/2 cup
- Sour cream - 1 cup
- Salt - 1/4 teaspoon
- Baking soda - 1/2 teaspoon
- Baking powder - 1 teaspoon
- All-purpose flour - 2 cups
- Vanilla extract - 1 teaspoon
- Eggs - 2
- Sugar - 1 cup
- Butter - 1/2 cup, softened
- Stumptown coffee - 1 cup, brewed
Let's Get Started
- Preheat the oven to 350°F and grease a 9-inch cake pan.
- In a large bowl, cream together the butter and sugar until light and fluffy.
- Beat in the eggs one at a time, then stir in the vanilla extract.
- In a separate bowl, combine the flour, baking powder, baking soda, and salt.
- Gradually add the dry ingredients to the butter mixture, alternating with the sour cream and coffee.
- Pour half of the batter into the prepared pan.

- Pour the remaining batter over the top, then sprinkle with the remaining brown sugar mixture.
- Bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool in the pan for 10 minutes, then remove it from the pan and allow it to cool completely on a wire rack.
