Blue Bottle Coffee Cake
A delicious coffee cake with a hint of Blue Bottle coffee, perfect for breakfast or dessert.
Ingredients - Serves 8
- Chopped nuts - 1/2 cup
- Cinnamon - 1 teaspoon
- Brown sugar - 1/2 cup
- Sour cream - 1/2 cup
- Blue bottle coffee - 1 cup, brewed and cooled
- Vanilla extract - 1 teaspoon
- Eggs - 2
- Granulated sugar - 1 cup
- Unsalted butter - 1/2 cup, softened
- Salt - 1/4 teaspoon
- Baking soda - 1/2 teaspoon
- Baking powder - 1 teaspoon
- All-purpose flour - 2 cups
Let's Get Started
- Preheat the oven to 350°F and grease a 9-inch cake pan.
- In a medium bowl, combine the flour, baking powder, baking soda, and salt.
- In a large bowl, cream together the butter and granulated sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla.
- Gradually mix in the flour mixture, alternating with the coffee and sour cream.
- Pour half of the batter into the prepared pan.
- In a small bowl, combine the brown sugar, cinnamon, and chopped nuts. Sprinkle half of this mixture over the batter in the pan.
- Spread the remaining batter over the top, then sprinkle with the remaining brown sugar mixture.
- Bake for 45 minutes, or until a toothpick inserted into the center of the cake comes out clean. Let cool before serving.
