Stuffed Pork Tenderloin
This delicious stuffed pork tenderloin is filled with a savory mixture of spinach, feta cheese, and sun-dried tomatoes.
Ingredients - Serves 6
- Paprika - 1 teaspoon
- Dried oregano - 1 teaspoon
- Salt and pepper - To taste
- Olive oil - 2 tablespoons
- Garlic - 3 cloves, minced
- Sun-dried tomatoes - 1/4 cup, chopped
- Feta cheese - 1/2 cup, crumbled
- Spinach - 2 cups, chopped
- Pork tenderloin - 2 pounds
Let's Get Started
- Preheat the oven to 375°F.
- Butterfly the pork tenderloin by making a lengthwise cut down the center, without cutting all the way through.
- Open up the pork tenderloin and flatten it with a meat mallet until it is an even thickness.
- In a skillet, heat the olive oil over medium heat. Add the garlic and cook until fragrant.
- Add the spinach to the skillet and cook until wilted. Remove from heat.
- In a bowl, combine the cooked spinach, feta cheese, sun-dried tomatoes, salt, pepper, dried oregano, and paprika.
- Spread the spinach mixture evenly over the flattened pork tenderloin.
- Roll up the pork tenderloin tightly and secure with kitchen twine or toothpicks.
- Season the outside of the pork tenderloin with salt, pepper, dried oregano, and paprika.
- Place the stuffed pork tenderloin on a baking sheet and roast in the preheated oven for 30-35 minutes, or until the internal temperature reaches 145°F.
- Remove from the oven and let the pork tenderloin rest for 5 minutes before slicing.
- Slice the stuffed pork tenderloin into thick slices and serve.
