Stuffed Pork Tenderloin

Let's Get Started

  1. Preheat the oven to 375°F.
  2. Butterfly the pork tenderloin by making a lengthwise cut down the center, without cutting all the way through.
  3. Open up the pork tenderloin and flatten it with a meat mallet until it is an even thickness.
  4. In a skillet, heat the olive oil over medium heat. Add the garlic and cook until fragrant.
  5. Add the spinach to the skillet and cook until wilted. Remove from heat.
  6. In a bowl, combine the cooked spinach, feta cheese, sun-dried tomatoes, salt, pepper, dried oregano, and paprika.
  7. Spread the spinach mixture evenly over the flattened pork tenderloin.
  8. Roll up the pork tenderloin tightly and secure with kitchen twine or toothpicks.
  9. Season the outside of the pork tenderloin with salt, pepper, dried oregano, and paprika.
  10. Place the stuffed pork tenderloin on a baking sheet and roast in the preheated oven for 30-35 minutes, or until the internal temperature reaches 145°F.
  11. Remove from the oven and let the pork tenderloin rest for 5 minutes before slicing.
  12. Slice the stuffed pork tenderloin into thick slices and serve.
