  1. In a large bowl, combine the flour and salt. Add the butter and use your fingers to rub it into the flour until the mixture resembles coarse crumbs.
  2. Gradually add the ice water, stirring until the dough comes together. Wrap in plastic wrap and refrigerate for at least 1 hour.
  3. Preheat the oven to 375°F (190°C).
  4. In a large bowl, combine the apples, sugar, cinnamon, and lemon zest.
  5. On a lightly floured surface, roll out the dough into a large rectangle. Spread the apple mixture over the dough, leaving a 1-inch border.
  6. Roll up the dough, starting from one of the long sides, to form a log. Pinch the ends to seal.
  7. Place the strudel on a baking sheet and brush with the beaten egg.
  8. Bake for 45 minutes, or until the crust is golden and the filling is bubbling. Let cool before slicing and serving.
