Steelhead with Cauliflower Mash
This delicious steelhead trout is served with creamy cauliflower mash and a tangy lemon butter sauce.
Ingredients - Serves 2
- Fresh parsley - 1 tablespoon, chopped
- Lemon juice - 1 tablespoon
- Butter - 2 tablespoons
- Garlic - 2 cloves, minced
- Cauliflower - 1 head, cut into florets
- Black pepper - 1/4 teaspoon
- Salt - 1/2 teaspoon
- Olive oil - 2 tablespoons
- Steelhead trout fillets - 2 fillets
Let's Get Started
- Preheat the oven to 400°F.
- Season the steelhead trout fillets with salt and black pepper.
- Heat 1 tablespoon of olive oil in an oven-safe skillet over medium-high heat.
- Add the trout fillets to the skillet, skin side down, and cook for 3-4 minutes until the skin is crispy.
- Transfer the skillet to the preheated oven and bake for 8-10 minutes, or until the fish is cooked through.
- Meanwhile, steam the cauliflower florets until tender. Drain well.
- In a separate pan, heat 1 tablespoon of olive oil over medium heat.
- Add the minced garlic and cook for 1 minute until fragrant.
- Add the steamed cauliflower to the pan and mash with a potato masher or fork until smooth.
- Stir in the butter, lemon juice, and chopped parsley. Season with salt and pepper to taste.
- Serve the steelhead trout fillets on top of the cauliflower mash, drizzle with the lemon butter sauce, and garnish with additional parsley.
