Steelhead with Cauliflower Mash

  1. Preheat the oven to 400°F.
  2. Season the steelhead trout fillets with salt and black pepper.
  3. Heat 1 tablespoon of olive oil in an oven-safe skillet over medium-high heat.
  4. Add the trout fillets to the skillet, skin side down, and cook for 3-4 minutes until the skin is crispy.
  5. Transfer the skillet to the preheated oven and bake for 8-10 minutes, or until the fish is cooked through.
  6. Meanwhile, steam the cauliflower florets until tender. Drain well.
  7. In a separate pan, heat 1 tablespoon of olive oil over medium heat.
  8. Add the minced garlic and cook for 1 minute until fragrant.
  9. Add the steamed cauliflower to the pan and mash with a potato masher or fork until smooth.
  10. Stir in the butter, lemon juice, and chopped parsley. Season with salt and pepper to taste.
  11. Serve the steelhead trout fillets on top of the cauliflower mash, drizzle with the lemon butter sauce, and garnish with additional parsley.
