Let's Get Started

  1. Preheat the grill or grill pan to medium-high heat.
  2. Season the steak with salt and pepper.
  3. Grill the steak for about 4-5 minutes per side, or until desired doneness. Let it rest for a few minutes, then slice it thinly against the grain.
  4. In a skillet, heat the olive oil over medium heat. Add the sliced onions and cook until caramelized, about 10 minutes. Season with salt and pepper.
  5. In a small bowl, mix together the mayonnaise and Dijon mustard to make the aioli sauce.
  6. Spread the aioli sauce on one side of each slice of ciabatta bread.
  7. Layer the sliced steak, caramelized onions, provolone cheese, lettuce, and tomato on one slice of bread. Top with another slice of bread.
  8. Heat a panini press or skillet over medium heat. Place the sandwich in the press or skillet and cook for 3-4 minutes on each side, until the bread is toasted and the cheese is melted.
  9. Remove from heat, slice the sandwich in half, and serve hot.
