Steak Fajita Bowls
These steak fajita bowls are packed with flavor and make a great weeknight dinner. They're also perfect for meal prep!
Ingredients - Serves 4
- Cilantro - For garnish
- Salsa - To taste
- Avocado - 1, sliced
- Corn - 1 cup, cooked
- Black beans - 1 can, drained and rinsed
- Rice - 2 cups, cooked
- Fajita seasoning - 1 packet
- Olive oil - 2 tablespoons
- Onion - 1, sliced
- Bell peppers - 3, sliced
- Flank steak - 1 pound
Let's Get Started
- Heat the olive oil in a large skillet over medium-high heat.
- Add the steak and cook until browned, about 5 minutes per side. Remove from the skillet and let rest.
- In the same skillet, add the bell peppers and onion and cook until softened, about 5 minutes.
- Slice the steak against the grain and return it to the skillet. Sprinkle with the fajita seasoning and stir to combine.
- Divide the rice between four bowls. Top with the steak and vegetable mixture, black beans, corn, avocado, and salsa.
- Garnish with cilantro and serve.
