Squid Soup
A delicious and hearty soup featuring tender squid, vegetables, and a savory broth.
Ingredients - Serves 4
- Parsley - 1 tablespoon, chopped
- Salt and pepper - To taste
- Bay leaf - 1
- Chicken broth - 4 cups
- Potato - 1 large, chopped
- Carrot - 1 large, chopped
- Garlic - 3 cloves, minced
- Onion - 1 large, chopped
- Olive oil - 2 tablespoons
- Squid - 500 grams, cleaned and sliced
Let's Get Started
- Heat the olive oil in a large pot over medium heat.
- Add the onion and garlic and cook until the onion is translucent, about 5 minutes.
- Add the squid and cook until it becomes opaque, about 5 minutes.
- Add the carrot and potato and cook for another 5 minutes.
- Add the chicken broth, bay leaf, salt, and pepper. Bring to a boil.
- Reduce the heat to low and simmer for 20 minutes, or until the vegetables are tender.
- Remove the bay leaf and adjust the seasoning if necessary.
- Serve the soup hot, garnished with chopped parsley.
