Spiny Lobster Tagliatelle

Ingredients - Serves 4

Let's Get Started

  1. Boil the lobsters for about 15 minutes, then remove the meat from the shells and cut into chunks.
  2. Heat the olive oil in a large pan over medium heat. Add the garlic and onion and cook until soft.
  3. Add the tomatoes and cook until they break down into a sauce, about 15 minutes.
  4. Add the lobster meat and white wine to the pan. Simmer for about 10 minutes, until the alcohol has evaporated.
  5. In the meantime, cook the tagliatelle in a large pot of boiling salted water until al dente.
  6. Drain the pasta and add it to the pan with the lobster sauce. Toss well to combine.
  7. Season with salt and pepper to taste, and garnish with the chopped parsley before serving.
