Spiny Lobster Tagliatelle
A luxurious pasta dish featuring fresh spiny lobster, cooked in a rich tomato sauce and served over tagliatelle.
Ingredients - Serves 4
- Parsley - A handful, chopped
- Salt and pepper - To taste
- Tagliatelle - 500 grams
- White wine - 1 cup
- Tomatoes - 5 large, diced
- Onion - 1 large, finely chopped
- Garlic - 4 cloves, minced
- Olive oil - 2 tablespoons
- Spiny lobster - 2 whole
Let's Get Started
- Boil the lobsters for about 15 minutes, then remove the meat from the shells and cut into chunks.
- Heat the olive oil in a large pan over medium heat. Add the garlic and onion and cook until soft.
- Add the tomatoes and cook until they break down into a sauce, about 15 minutes.
- Add the lobster meat and white wine to the pan. Simmer for about 10 minutes, until the alcohol has evaporated.
- In the meantime, cook the tagliatelle in a large pot of boiling salted water until al dente.
- Drain the pasta and add it to the pan with the lobster sauce. Toss well to combine.
- Season with salt and pepper to taste, and garnish with the chopped parsley before serving.
