Spinach Channa Masala
This flavorful Indian dish combines spinach and chickpeas in a rich and aromatic tomato-based sauce.
Ingredients - Serves 4
- Fresh cilantro - For garnish
- Oil - 2 tablespoons
- Salt - To taste
- Red chili powder - 1/2 teaspoon
- Garam masala - 1/2 teaspoon
- Turmeric powder - 1/2 teaspoon
- Coriander powder - 1 teaspoon
- Cumin seeds - 1 teaspoon
- Tomatoes - 2 medium, chopped
- Ginger - 1-inch piece, grated
- Garlic - 3 cloves, minced
- Onion - 1 large, finely chopped
- Chickpeas - 1 can, drained and rinsed
- Spinach - 1 bunch, washed and chopped
Let's Get Started
- Heat oil in a pan over medium heat.
- Add cumin seeds and let them splutter.
- Add chopped onions and sauté until golden brown.
- Add minced garlic and grated ginger. Sauté for a minute.
- Add chopped tomatoes and cook until they turn soft.
- Add coriander powder, turmeric powder, garam masala, red chili powder, and salt. Mix well.
- Add chopped spinach and cook until wilted.
- Add drained and rinsed chickpeas. Mix well.
- Cover the pan and simmer for 10-15 minutes, allowing the flavors to blend together.
- Garnish with fresh cilantro and serve hot with rice or naan bread.
