- Fresh spinach - 6 cups
- Salt and pepper - To taste
- Dried oregano - 1 teaspoon
- Dried thyme - 1 teaspoon
- Diced tomatoes - 1 can (14.5 oz)
- Canned white beans - 2 cans (15 oz each), drained and rinsed
- Vegetable broth - 4 cups
- Celery - 2 stalks, diced
- Carrots - 2 medium, diced
- Garlic - 3 cloves, minced
- Onion - 1 medium, diced
- Olive oil - 2 tablespoons
Let's Get Started
- Heat the olive oil in a large pot over medium heat.
