Spinach and Gouda Gratin

Ingredients - Serves 6

  1. Preheat the oven to 375°F.
  2. Wash the spinach thoroughly and remove any tough stems.
  3. In a large pot, bring water to a boil and blanch the spinach for 1-2 minutes. Drain and squeeze out any excess water.
  4. In a saucepan, heat the heavy cream over medium heat until hot but not boiling.
  5. Add the minced garlic, salt, and pepper to the cream and stir well.
  6. Add the blanched spinach to the cream mixture and stir until well combined.
  7. Transfer the spinach mixture to a greased baking dish and spread it out evenly.
  8. Sprinkle the grated Gouda cheese over the top of the spinach.
  9. In a small bowl, mix together the breadcrumbs and melted butter.
  10. Sprinkle the breadcrumb mixture over the cheese.
  11. Bake in the preheated oven for 25-30 minutes, or until the top is golden and bubbly.
  12. Remove from the oven and let it cool for a few minutes before serving.
