Spinach and Asparagus Salad
This refreshing salad combines fresh spinach, tender asparagus, and a tangy vinaigrette dressing.
Ingredients - Serves 4
- Walnuts - 1/4 cup, chopped
- Feta cheese - 1/2 cup, crumbled
- Red onion - 1/4 cup, thinly sliced
- Cherry tomatoes - 1 cup, halved
- Asparagus - 1 bunch, trimmed and cut into 2-inch pieces
- Fresh spinach - 6 cups
Let's Get Started
- Bring a pot of salted water to a boil. Add the asparagus and cook for 2-3 minutes, until crisp-tender. Drain and rinse with cold water.
