Spicy Tomato Rice with Basmati Rice

Ingredients - Serves 4

Let's Get Started

  1. Wash the basmati rice under cold water until the water runs clear. Soak the rice in water for 30 minutes, then drain.
  2. Heat vegetable oil in a large pan over medium heat. Add cumin seeds and let them splutter.
  3. Add chopped onions and sauté until they turn golden brown.
  4. Add minced garlic, grated ginger, and chopped green chili. Sauté for a minute.
  5. Add chopped tomatoes and cook until they become soft and mushy.
  6. Add turmeric powder, red chili powder, coriander powder, garam masala, and salt. Mix well.
  7. Add the soaked and drained basmati rice to the pan. Stir gently to coat the rice with the tomato mixture.
  8. Add water and bring to a boil. Reduce the heat to low, cover the pan, and let it simmer for 15-20 minutes, or until the rice is cooked and all the water is absorbed.
  9. Remove from heat and let it sit covered for 5 minutes.
  10. Fluff the rice with a fork and garnish with chopped fresh coriander leaves.
  11. Drizzle with lemon juice before serving.
  12. Serve hot and enjoy!
