Spicy Tomato Rice with Basmati Rice
This flavorful and aromatic spicy tomato rice is made with basmati rice, tomatoes, and a blend of spices.
Ingredients - Serves 4
- Vegetable oil - 2 tablespoons
- Lemon juice - 1 tablespoon
- Fresh coriander leaves - 2 tablespoons, chopped
- Water - 2 cups
- Salt - To taste
- Garam masala - 1/2 teaspoon
- Coriander powder - 1 teaspoon
- Red chili powder - 1/2 teaspoon
- Turmeric powder - 1/2 teaspoon
- Cumin seeds - 1 teaspoon
- Green chili - 1, finely chopped
- Ginger - 1-inch piece, grated
- Garlic - 3 cloves, minced
- Onion - 1 medium, finely chopped
- Tomatoes - 3 medium, chopped
- Basmati rice - 1 cup
Let's Get Started
- Wash the basmati rice under cold water until the water runs clear. Soak the rice in water for 30 minutes, then drain.
- Heat vegetable oil in a large pan over medium heat. Add cumin seeds and let them splutter.
- Add chopped onions and sauté until they turn golden brown.
- Add minced garlic, grated ginger, and chopped green chili. Sauté for a minute.
- Add chopped tomatoes and cook until they become soft and mushy.
- Add turmeric powder, red chili powder, coriander powder, garam masala, and salt. Mix well.
- Add the soaked and drained basmati rice to the pan. Stir gently to coat the rice with the tomato mixture.
- Add water and bring to a boil. Reduce the heat to low, cover the pan, and let it simmer for 15-20 minutes, or until the rice is cooked and all the water is absorbed.
- Remove from heat and let it sit covered for 5 minutes.
- Fluff the rice with a fork and garnish with chopped fresh coriander leaves.
- Drizzle with lemon juice before serving.
- Serve hot and enjoy!
