Spicy Black Bean Soup

Let's Get Started

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the onion, garlic, carrot, and celery and cook until the vegetables are soft, about 5 minutes.
  3. Add the black beans, vegetable broth, cumin, chili powder, salt, and pepper. Bring to a boil, then reduce the heat and simmer for 45 minutes.
  4. Use an immersion blender to partially blend the soup, leaving some beans whole for texture.
  5. Stir in the lime juice.
  6. Serve the soup hot, garnished with cilantro.
