Spicy Black Bean Soup
A hearty and flavorful soup made with black beans, vegetables, and spices.
Ingredients - Serves 4
- Cilantro - For garnish
- Lime - 1, juiced
- Salt and pepper - To taste
- Chili powder - 1 teaspoon
- Cumin - 1 teaspoon
- Vegetable broth - 4 cups
- Black beans - 2 cans, drained and rinsed
- Celery - 1 stalk, chopped
- Carrot - 1, chopped
- Garlic - 3 cloves, minced
- Onion - 1, chopped
- Olive oil - 1 tablespoon
Let's Get Started
- Heat the olive oil in a large pot over medium heat.
- Add the onion, garlic, carrot, and celery and cook until the vegetables are soft, about 5 minutes.
- Add the black beans, vegetable broth, cumin, chili powder, salt, and pepper. Bring to a boil, then reduce the heat and simmer for 45 minutes.
- Use an immersion blender to partially blend the soup, leaving some beans whole for texture.
- Stir in the lime juice.
- Serve the soup hot, garnished with cilantro.
