Spiced Chickpea Shakshuka
A hearty, vegetarian dish of chickpeas simmered in a spiced tomato sauce, topped with poached eggs.
Ingredients - Serves 4
- Fresh parsley - For garnish
- Salt and pepper - To taste
- Eggs - 4
- Chickpeas - 1 can (15 ounces), drained and rinsed
- Tomatoes - 1 can (28 ounces), diced
- Cayenne pepper - 1/2 teaspoon
- Paprika - 1 teaspoon
- Cumin - 1 teaspoon
- Garlic - 3 cloves, minced
- Red bell pepper - 1, chopped
- Onion - 1 large, chopped
- Olive oil - 2 tablespoons
Let's Get Started
- Heat the olive oil in a large skillet over medium heat.
- Add the onion and bell pepper and cook until softened, about 5 minutes.
- Add the garlic, cumin, paprika, and cayenne and cook for another minute.
- Add the tomatoes and chickpeas and bring to a simmer.
- Make four wells in the tomato mixture and crack an egg into each well.
- Cover the skillet and cook until the eggs are done to your liking.
- Season with salt and pepper and garnish with fresh parsley before serving.
