Spiced Chickpea Shakshuka

Ingredients - Serves 4

Let's Get Started

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the onion and bell pepper and cook until softened, about 5 minutes.
  3. Add the garlic, cumin, paprika, and cayenne and cook for another minute.
  4. Add the tomatoes and chickpeas and bring to a simmer.
  5. Make four wells in the tomato mixture and crack an egg into each well.
  6. Cover the skillet and cook until the eggs are done to your liking.
  7. Season with salt and pepper and garnish with fresh parsley before serving.
