Speculoos
These delicious speculoos cookies are spiced with cinnamon, nutmeg, and cloves, and have a crunchy texture.
Ingredients - Serves 24
- Salt - 1/4 teaspoon
- Cloves - 1/4 teaspoon
- Nutmeg - 1/2 teaspoon
- Cinnamon - 1 teaspoon
- Baking powder - 1 teaspoon
- All-purpose flour - 2 cups
- Vanilla extract - 1 teaspoon
- Egg - 1
- Brown sugar - 1/2 cup, packed
- Granulated sugar - 1 cup
- Unsalted butter - 1 cup, softened
Let's Get Started
- In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Add the egg and vanilla extract, and mix until well combined.
- In a separate bowl, whisk together the all-purpose flour, baking powder, cinnamon, nutmeg, cloves, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Cover the dough and refrigerate for at least 1 hour.
- Preheat the oven to 350°F (175°C).
- Line a baking sheet with parchment paper.
- Roll the chilled dough into small balls, about 1 inch in diameter, and place them on the prepared baking sheet.
- Using the back of a fork, flatten each ball and create a crisscross pattern on top.
- Bake for 10-12 minutes, or until the edges are golden brown.
- Allow the cookies to cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.
