  2. Add the sliced potatoes and onions to the skillet and cook until the potatoes are tender and lightly browned, about 15-20 minutes. Stir occasionally to prevent sticking.
  3. In a large bowl, beat the eggs and season with salt and pepper.
  4. Transfer the cooked potatoes and onions to the bowl with the beaten eggs. Mix well to combine.
  5. Heat a little more olive oil in the same skillet over medium heat.
  6. Pour the potato and egg mixture into the skillet, spreading it evenly.
  7. Cook for about 5-7 minutes, or until the bottom is set and golden brown.
  8. Using a large plate or a lid, carefully flip the tortilla to cook the other side. Cook for another 5-7 minutes, or until the tortilla is fully cooked and golden brown.
  9. Remove from heat and let the tortilla cool slightly before slicing into wedges.
  10. Serve warm or at room temperature. Enjoy!
