Spanish Rice

Ingredients - Serves 6

Let's Get Started

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the onion and garlic and cook until the onion is translucent, about 5 minutes.
  3. Add the diced tomato and cook for another 2 minutes.
  4. Add the rice, cumin, paprika, salt, and pepper. Stir to coat the rice with the spices.
  5. Pour in the broth and bring to a boil.
  6. Reduce the heat to low, cover the skillet, and simmer for 15 minutes, or until the rice is cooked and the liquid is absorbed.
  7. Stir in the frozen peas and cook for another 2 minutes, until heated through.
  8. Remove from heat and let the rice sit, covered, for 5 minutes.
  9. Fluff the rice with a fork and sprinkle with fresh cilantro before serving.
