Spanish Rice
This flavorful Spanish rice is made with tomatoes, onions, and spices.
Ingredients - Serves 6
- Fresh cilantro - 2 tablespoons, chopped
- Frozen peas - 1/2 cup
- Pepper - 1/4 teaspoon
- Salt - 1/2 teaspoon
- Paprika - 1/2 teaspoon
- Cumin - 1 teaspoon
- Chicken or vegetable broth - 2 cups
- Long-grain white rice - 1 cup
- Tomato - 1 large, diced
- Garlic - 2 cloves, minced
- Onion - 1 medium, finely chopped
- Olive oil - 2 tablespoons
Let's Get Started
- Heat the olive oil in a large skillet over medium heat.
- Add the onion and garlic and cook until the onion is translucent, about 5 minutes.
- Add the diced tomato and cook for another 2 minutes.
- Add the rice, cumin, paprika, salt, and pepper. Stir to coat the rice with the spices.
- Pour in the broth and bring to a boil.
- Reduce the heat to low, cover the skillet, and simmer for 15 minutes, or until the rice is cooked and the liquid is absorbed.
- Stir in the frozen peas and cook for another 2 minutes, until heated through.
- Remove from heat and let the rice sit, covered, for 5 minutes.
- Fluff the rice with a fork and sprinkle with fresh cilantro before serving.
