Spaghetti Squash with Marinara Sauce

Ingredients - Serves 4

Let's Get Started

  1. Preheat the oven to 400°F and line a baking sheet with parchment paper.
  2. Cut the spaghetti squash in half lengthwise and scoop out the seeds. Drizzle with olive oil and season with salt and pepper. Place cut side down on the baking sheet.
  3. Roast the squash in the oven for 40-45 minutes, or until the flesh is tender and can be easily scraped with a fork.
  4. While the squash is roasting, heat the remaining olive oil in a large skillet over medium heat. Add the garlic and onion and sauté until softened.
  5. Add the diced tomatoes, tomato paste, basil, oregano, and red pepper flakes to the skillet. Simmer for 15-20 minutes, or until the sauce has thickened.
  6. Once the squash is done roasting, let it cool slightly before using a fork to scrape the flesh into spaghetti-like strands.
  7. Serve the spaghetti squash topped with the marinara sauce.
