Spaghetti Squash with Marinara Sauce
A healthy and delicious alternative to traditional pasta, spaghetti squash is roasted and served with a hearty marinara sauce.
Ingredients - Serves 4
- Red pepper flakes - 1/4 teaspoon
- Oregano - 1 teaspoon, dried
- Basil - 1 teaspoon, dried
- Tomato paste - 2 tablespoons
- Canned diced tomatoes - 1 can (14.5 oz)
- Onion - 1, chopped
- Garlic - 2 cloves, minced
- Salt and pepper - To taste
- Olive oil - 2 tablespoons
- Spaghetti squash - 1 medium
Let's Get Started
- Preheat the oven to 400°F and line a baking sheet with parchment paper.
- Cut the spaghetti squash in half lengthwise and scoop out the seeds. Drizzle with olive oil and season with salt and pepper. Place cut side down on the baking sheet.
- Roast the squash in the oven for 40-45 minutes, or until the flesh is tender and can be easily scraped with a fork.
- While the squash is roasting, heat the remaining olive oil in a large skillet over medium heat. Add the garlic and onion and sauté until softened.
- Add the diced tomatoes, tomato paste, basil, oregano, and red pepper flakes to the skillet. Simmer for 15-20 minutes, or until the sauce has thickened.
- Once the squash is done roasting, let it cool slightly before using a fork to scrape the flesh into spaghetti-like strands.
- Serve the spaghetti squash topped with the marinara sauce.
