South African Roosterkoek Fruit Salad
A delightful combination of traditional South African bread, Roosterkoek, served with a refreshing fruit salad.
Ingredients - Serves 4
- Lemon juice - 1 tablespoon
- Honey - 1/4 cup
- Mixed fruit - 2 cups, diced
- Warm water - 3/4 cup
- Salt - 1/2 teaspoon
- Sugar - 1 tablespoon
- Instant yeast - 1 packet
- Bread flour - 2 cups
Let's Get Started
- In a large bowl, combine the flour, yeast, sugar, and salt.
- Gradually add the warm water, stirring until a dough forms.
- Knead the dough on a floured surface for about 5 minutes, until smooth and elastic.
- Divide the dough into small balls and place them on a baking sheet. Cover with a cloth and let rise for about 1 hour, until doubled in size.
- Preheat a grill to medium heat. Place the dough balls on the grill and cook for about 15 minutes, turning occasionally, until golden brown and cooked through.
- While the roosterkoek is cooking, prepare the fruit salad. In a large bowl, combine the mixed fruit, honey, and lemon juice.
- Serve the warm roosterkoek with the fruit salad on the side.
