South African Bobotie Curry
Bobotie is a traditional South African dish with a flavorful curry-spiced ground meat filling, topped with a creamy egg custard.
Ingredients - Serves 6
- Olive oil - 2 tablespoons
- Salt and pepper - To taste
- Milk - 1 cup
- Eggs - 3
- Almonds - 1/4 cup, slivered
- Raisins - 1/4 cup
- Bread - 2 slices, soaked in milk
- White vinegar - 2 tablespoons
- Apricot jam - 2 tablespoons
- Ginger - 1 teaspoon, grated
- Ground cinnamon - 1/2 teaspoon
- Ground coriander - 1 teaspoon
- Ground cumin - 1 teaspoon
- Turmeric - 1 teaspoon
- Curry powder - 2 tablespoons
- Garlic - 3 cloves, minced
- Onion - 1 large, finely chopped
- Ground beef - 1 kg
Let's Get Started
- Preheat the oven to 180°C (350°F).
- Heat olive oil in a large pan over medium heat. Add the chopped onion and minced garlic, and sauté until the onion is translucent.
- Add the ground beef to the pan and cook until browned. Drain any excess fat.
- In a small bowl, mix together the curry powder, turmeric, ground cumin, ground coriander, ground cinnamon, and grated ginger.
- Add the spice mixture, apricot jam, and white vinegar to the pan with the ground beef. Stir well to combine.
- Squeeze out the excess milk from the soaked bread slices and add them to the pan. Mix well.
- Stir in the raisins and slivered almonds. Season with salt and pepper to taste.
- Transfer the mixture to a greased baking dish and spread it evenly.
- In a separate bowl, whisk together the eggs and milk. Pour the egg custard over the meat mixture in the baking dish.
- Bake in the preheated oven for 40-45 minutes, or until the custard is set and golden brown on top.
- Remove from the oven and let it cool for a few minutes before serving.
- Serve the Bobotie Curry with steamed rice or bread and enjoy!
