  1. In a large bowl, combine the sourdough starter, flour, milk, egg, sugar, baking soda, and salt. Mix until well combined.
  2. Let the batter sit at room temperature for 30 minutes to allow the sourdough to ferment and develop flavor.
  3. Heat a non-stick skillet or griddle over medium heat and brush with melted butter.
  4. Pour 1/4 cup of batter onto the skillet for each pancake.
  5. Cook until bubbles form on the surface of the pancake, then flip and cook for another 1-2 minutes, or until golden brown.
  6. Repeat with the remaining batter, adding more melted butter to the skillet as needed.
