Soupe de Tomates
This classic French tomato soup is made with fresh tomatoes, herbs, and a touch of cream.
Ingredients - Serves 4
- Heavy cream - 1/2 cup
- Salt and pepper - To taste
- Fresh thyme - 1 teaspoon
- Fresh basil - 1/4 cup, chopped
- Vegetable broth - 4 cups
- Tomato paste - 2 tablespoons
- Tomatoes - 6 large, chopped
- Garlic - 2 cloves, minced
- Onion - 1 medium, chopped
- Olive oil - 2 tablespoons
Let's Get Started
- Heat the olive oil in a large pot over medium heat.
- Add the onion and garlic and cook until the onion is soft and translucent, about 5 minutes.
- Add the chopped tomatoes and tomato paste. Cook for another 5 minutes, stirring occasionally.
- Add the vegetable broth, basil, thyme, salt, and pepper. Bring to a boil, then reduce the heat and simmer for 20 minutes.
- Using an immersion blender or regular blender, puree the soup until smooth.
- Return the soup to the pot and stir in the heavy cream. Heat gently until warmed through.
- Serve hot and garnish with additional fresh basil, if desired.
