Ingredients - Serves 4

Let's Get Started

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the onion and garlic and cook until the onion is soft and translucent, about 5 minutes.
  3. Add the chopped tomatoes and tomato paste. Cook for another 5 minutes, stirring occasionally.
  4. Add the vegetable broth, basil, thyme, salt, and pepper. Bring to a boil, then reduce the heat and simmer for 20 minutes.
  5. Using an immersion blender or regular blender, puree the soup until smooth.
  6. Return the soup to the pot and stir in the heavy cream. Heat gently until warmed through.
  7. Serve hot and garnish with additional fresh basil, if desired.
