Soupe de Potiron
This creamy and flavorful pumpkin soup is a classic French dish.
Ingredients - Serves 6
- Parsley - For garnish
- Salt and pepper - To taste
- Nutmeg - 1/4 teaspoon
- Butter - 2 tablespoons
- Heavy cream - 1/2 cup
- Vegetable broth - 4 cups
- Garlic - 2 cloves, minced
- Onion - 1 medium, chopped
- Pumpkin - 1 small, peeled and diced
Let's Get Started
- In a large pot, melt the butter over medium heat.
- Add the chopped onion and minced garlic. Cook until the onion is translucent, about 5 minutes.
- Add the diced pumpkin and cook for another 5 minutes, stirring occasionally.
- Pour in the vegetable broth and bring to a boil. Reduce the heat and simmer for 15-20 minutes, or until the pumpkin is tender.
- Using an immersion blender or a regular blender, puree the soup until smooth.
- Stir in the heavy cream and nutmeg. Season with salt and pepper to taste.
- Simmer for another 5 minutes to heat through.
- Serve hot, garnished with fresh parsley.
