Soupe Au Pistou
Soupe au Pistou is a traditional Provençal soup with summer vegetables and a pesto-like sauce called pistou.
Ingredients - Serves 6
- Olive oil - 1/4 cup, for the pistou
- Garlic - 2 cloves, for the pistou
- Parmesan cheese - 1/2 cup, grated
- Basil - 1 bunch, fresh
- Pasta - 1 cup, small shapes
- White beans - 1 can, drained and rinsed
- Tomatoes - 2, chopped
- Potatoes - 2, chopped
- Green beans - 1 cup, chopped
- Zucchini - 2, chopped
- Carrots - 2, chopped
- Garlic - 4 cloves, minced
- Onions - 2, chopped
- Olive oil - 2 tablespoons
Let's Get Started
- Heat the olive oil in a large pot over medium heat. Add the onions and garlic and cook until soft.
- Add the carrots, zucchini, green beans, potatoes, and tomatoes. Cook for a few minutes until the vegetables start to soften.
- Add enough water to cover the vegetables and bring to a boil. Reduce the heat and simmer for about 30 minutes.
- Add the white beans and pasta and cook for another 10 minutes.
- While the soup is cooking, make the pistou. In a food processor, combine the basil, Parmesan, garlic, and olive oil. Process until smooth.
- When the soup is done, stir in the pistou. Serve hot.
