Let's Get Started

  1. Heat the olive oil in a large pot over medium heat. Add the onions and garlic and cook until soft.
  2. Add the carrots, zucchini, green beans, potatoes, and tomatoes. Cook for a few minutes until the vegetables start to soften.
  3. Add enough water to cover the vegetables and bring to a boil. Reduce the heat and simmer for about 30 minutes.
  4. Add the white beans and pasta and cook for another 10 minutes.
  5. While the soup is cooking, make the pistou. In a food processor, combine the basil, Parmesan, garlic, and olive oil. Process until smooth.
  6. When the soup is done, stir in the pistou. Serve hot.
