  1. In a large mixing bowl, combine the flour, eggs, water, and salt. Knead until a smooth dough forms.
  2. Cover the dough with plastic wrap and let it rest for 30 minutes.
  3. In a separate bowl, mix together the diced ham, shredded mozzarella cheese, chopped spinach, grated Parmesan cheese, egg yolk, and butter.
  4. Roll out the dough on a floured surface until it is thin.
  5. Cut the dough into circles using a round cookie cutter or a glass.
  6. Place a spoonful of the filling in the center of each dough circle.
  7. Fold the dough over the filling to form a half-moon shape. Press the edges to seal.
  8. Bring a large pot of salted water to a boil. Cook the sorrentinos for about 5-7 minutes, or until they float to the surface.
  9. Remove the sorrentinos from the water and drain.
  10. In a separate saucepan, heat the tomato sauce.
  11. Serve the sorrentinos with the tomato sauce and sprinkle with bread crumbs.
