Sorrentinos
Sorrentinos are a traditional Argentine pasta dish filled with a delicious combination of ham, cheese, and spinach.
Ingredients - Serves 6
- Tomato sauce - 2 cups
- Bread crumbs - 1/2 cup
- Butter - 2 tablespoons
- Egg yolk - 1
- Parmesan cheese - 1/2 cup, grated
- Spinach - 2 cups, cooked and chopped
- Mozzarella cheese - 1 cup, shredded
- Ham - 1 cup, diced
- Salt - 1 teaspoon
- Water - 1/4 cup
- Eggs - 3
- All-purpose flour - 3 cups
Let's Get Started
- In a large mixing bowl, combine the flour, eggs, water, and salt. Knead until a smooth dough forms.
- Cover the dough with plastic wrap and let it rest for 30 minutes.
- In a separate bowl, mix together the diced ham, shredded mozzarella cheese, chopped spinach, grated Parmesan cheese, egg yolk, and butter.
- Roll out the dough on a floured surface until it is thin.
- Cut the dough into circles using a round cookie cutter or a glass.
- Place a spoonful of the filling in the center of each dough circle.
- Fold the dough over the filling to form a half-moon shape. Press the edges to seal.
- Bring a large pot of salted water to a boil. Cook the sorrentinos for about 5-7 minutes, or until they float to the surface.
- Remove the sorrentinos from the water and drain.
- In a separate saucepan, heat the tomato sauce.
- Serve the sorrentinos with the tomato sauce and sprinkle with bread crumbs.
