Let's Get Started

  1. In a large pot, heat the olive oil over medium heat. Add the chicken breasts and cook until browned on both sides. Remove from the pot and set aside.
  2. In the same pot, add the onion, bell pepper, and garlic. Cook until the vegetables are softened.
  3. Add the tomatoes, chicken broth, and the juice of two limes. Bring to a boil.
  4. Reduce the heat to low and add the chicken back to the pot. Simmer for 20 minutes, or until the chicken is cooked through.
  5. While the soup is simmering, preheat your oven to 375°F. Arrange the tortilla strips on a baking sheet and bake for 10-15 minutes, or until crispy.
  6. Remove the chicken from the soup and shred it with two forks. Return the shredded chicken to the pot.
  7. Season the soup with salt, pepper, and the juice of the remaining lime.
  8. Serve the soup hot, topped with the crispy tortilla strips and a sprinkle of cilantro.
