Sopa de Lima
Sopa de Lima is a classic Mexican soup from the Yucatan region. It's a tangy and refreshing blend of chicken, lime, and tortillas.
Ingredients - Serves 4
- Cilantro - For garnish
- Salt and pepper - To taste
- Olive oil - 2 tablespoons
- Tortillas - 4, cut into strips
- Chicken broth - 6 cups
- Tomatoes - 2, chopped
- Green bell pepper - 1, chopped
- Onion - 1, chopped
- Garlic - 2 cloves, minced
- Limes - 3
- Chicken breasts - 2, boneless and skinless
Let's Get Started
- In a large pot, heat the olive oil over medium heat. Add the chicken breasts and cook until browned on both sides. Remove from the pot and set aside.
- In the same pot, add the onion, bell pepper, and garlic. Cook until the vegetables are softened.
- Add the tomatoes, chicken broth, and the juice of two limes. Bring to a boil.
- Reduce the heat to low and add the chicken back to the pot. Simmer for 20 minutes, or until the chicken is cooked through.
- While the soup is simmering, preheat your oven to 375°F. Arrange the tortilla strips on a baking sheet and bake for 10-15 minutes, or until crispy.
- Remove the chicken from the soup and shred it with two forks. Return the shredded chicken to the pot.
- Season the soup with salt, pepper, and the juice of the remaining lime.
- Serve the soup hot, topped with the crispy tortilla strips and a sprinkle of cilantro.
