Songpyeon
Songpyeon is a traditional Korean dessert served during the Chuseok (Korean Thanksgiving Day). These small half-moon shaped rice cakes are filled with sweet fillings like sesame seeds, sweet red bean paste, or chestnuts.
Ingredients - Serves 4
- Pine needles - 1 handful, washed and dried
- Sesame oil - 1 tablespoon
- Sugar - 1/4 cup
- Sesame seeds - 1/2 cup, toasted and ground
- Salt - 1/4 teaspoon
- Water - 3/4 cup
- Glutinous rice flour - 2 cups
Let's Get Started
- In a large bowl, mix the glutinous rice flour with the salt and water. Knead until the dough comes together.
- Divide the dough into small pieces and shape each piece into a ball.
- Flatten each ball and fill with a mixture of ground sesame seeds and sugar. Fold the dough over to enclose the filling and shape into a half-moon.
- Prepare a steamer with water and a layer of pine needles. Arrange the songpyeon on top of the pine needles, making sure they don't touch each other.
- Steam the songpyeon over high heat for 30 minutes.
- Remove the songpyeon from the steamer and immediately toss them in sesame oil to prevent them from sticking together.
- Serve the songpyeon warm or at room temperature.
