- Fresh cilantro - For garnish
- Vegetable oil - 2 tablespoons
- Salt - To taste
- Sugar - 1 tablespoon
- Fish sauce - 2 tablespoons
- Curry powder - 2 tablespoons
- Ginger - 1 tablespoon, grated
- Garlic - 3 cloves, minced
- Onion - 1 large, chopped
- Carrots - 2 medium, peeled and sliced
- Potatoes - 2 medium, peeled and cubed
- Coconut milk - 400 ml
- Chicken - 500 grams, cut into pieces
Let's Get Started
- Heat the vegetable oil in a large pot over medium heat.
- Add the onion, garlic, and ginger. Cook until fragrant and the onion is translucent.
- Add the chicken pieces and cook until browned on all sides.
- Add the curry powder and stir to coat the chicken.
- Pour in the coconut milk and bring to a simmer.
- Add the potatoes, carrots, fish sauce, sugar, and salt. Stir well to combine.
- Cover the pot and let the curry simmer for about 30 minutes, or until the chicken is cooked through and the vegetables are tender.
- Taste and adjust the seasoning if needed.
- Serve the Somlar Kari Saek Mouan hot, garnished with fresh cilantro.
