Let's Get Started

  1. In a saucepan, combine sugar and water. Cook over medium heat until the sugar dissolves and the mixture thickens slightly.
  2. Add butter, saffron threads, almonds, pistachios, and cardamom powder to the saucepan. Stir well to combine.
  3. Continue cooking the mixture over medium heat, stirring constantly, until it reaches a golden caramel color and thickens further.
  4. Remove the saucepan from heat and quickly pour the mixture onto a greased baking sheet or silicone mat.
  5. Using a greased spatula, spread the mixture evenly to about 1/4 inch thickness.
  6. Allow the sohan to cool and harden completely, then break it into small pieces or cut into desired shapes.
  7. Store in an airtight container at room temperature.
