Sohan
Sohan is a traditional Persian saffron brittle candy made with almonds and pistachios.
Ingredients - Serves 12
- Cardamom powder - 1/2 teaspoon
- Pistachios - 1/2 cup, chopped
- Almonds - 1/2 cup, chopped
- Saffron threads - 1/2 teaspoon
- Butter - 1/4 cup
- Water - 1/2 cup
- Sugar - 1 cup
Let's Get Started
- In a saucepan, combine sugar and water. Cook over medium heat until the sugar dissolves and the mixture thickens slightly.
- Add butter, saffron threads, almonds, pistachios, and cardamom powder to the saucepan. Stir well to combine.
- Continue cooking the mixture over medium heat, stirring constantly, until it reaches a golden caramel color and thickens further.
- Remove the saucepan from heat and quickly pour the mixture onto a greased baking sheet or silicone mat.
- Using a greased spatula, spread the mixture evenly to about 1/4 inch thickness.
- Allow the sohan to cool and harden completely, then break it into small pieces or cut into desired shapes.
- Store in an airtight container at room temperature.
