Let's Get Started

  1. In a mixing bowl, combine the all-purpose flour and ghee. Mix well until the mixture resembles breadcrumbs.
  2. Gradually add milk and knead to form a smooth dough. Cover the dough with a damp cloth and let it rest for 15 minutes.
  3. In a separate bowl, mix together khoya, sugar, chopped almonds, cashews, raisins, and cardamom powder to make the filling.
  4. Divide the dough into small equal-sized balls. Roll out each ball into a small circle.
  5. Place a spoonful of the filling in the center of each circle. Fold the circle in half and seal the edges by pressing with a fork.
  6. Heat vegetable oil in a deep pan for frying. Once the oil is hot, carefully add the gujiyas and fry until golden brown on both sides.
  7. Remove the fried gujiyas from the oil and drain on a paper towel to remove excess oil.
  8. Allow the gujiyas to cool completely, then dust them with powdered sugar before serving.
