Gujiya
Gujiya is a popular Indian sweet pastry filled with a sweet khoya (milk solids) and dry fruits filling. It is deep-fried to a golden brown and traditionally made during festivals like Holi and Diwali.
Ingredients - Serves 10
- Powdered sugar - For dusting
- Vegetable oil - For deep frying
- Cardamom powder - 1/2 teaspoon
- Raisins - 1/4 cup
- Cashews - 1/4 cup, chopped
- Almonds - 1/4 cup, chopped
- Sugar - 1/2 cup
- Khoya (milk solids) - 1 cup
- Milk - 1/2 cup
- Ghee (clarified butter) - 1/4 cup
- All-purpose flour - 2 cups
Let's Get Started
- In a mixing bowl, combine the all-purpose flour and ghee. Mix well until the mixture resembles breadcrumbs.
- Gradually add milk and knead to form a smooth dough. Cover the dough with a damp cloth and let it rest for 15 minutes.
- In a separate bowl, mix together khoya, sugar, chopped almonds, cashews, raisins, and cardamom powder to make the filling.
- Divide the dough into small equal-sized balls. Roll out each ball into a small circle.
- Place a spoonful of the filling in the center of each circle. Fold the circle in half and seal the edges by pressing with a fork.
- Heat vegetable oil in a deep pan for frying. Once the oil is hot, carefully add the gujiyas and fry until golden brown on both sides.
- Remove the fried gujiyas from the oil and drain on a paper towel to remove excess oil.
- Allow the gujiyas to cool completely, then dust them with powdered sugar before serving.
