Socca
Socca is a traditional dish from Nice, France. It's a simple, savory, crispy pancake made with chickpea flour.
Ingredients - Serves 4
- Pepper - 1/4 teaspoon
- Salt - 1/2 teaspoon
- Olive oil - 2 tablespoons
- Water - 1 cup
- Chickpea flour - 1 cup
Let's Get Started
- In a bowl, whisk together the chickpea flour, water, olive oil, salt, and pepper.
- Let the batter rest for at least 30 minutes to allow the flour to absorb the water.
- Preheat your oven's broiler. Lightly oil a 12-inch oven-safe nonstick skillet and heat it under the broiler for a few minutes.
- Pour the batter into the hot skillet, tilting the skillet to spread it evenly.
- Broil until the top of the socca is browned and blistered, about 5 minutes.
- Cut the socca into wedges and serve hot.
