Soba Salad
A refreshing and healthy soba noodle salad with a tangy Asian dressing.
Ingredients - Serves 4
- Ginger - 1 teaspoon, grated
- Garlic - 1 clove, minced
- Honey - 1 tablespoon
- Sesame oil - 1 tablespoon
- Rice vinegar - 1 tablespoon
- Soy sauce - 2 tablespoons
- For the dressing: -
- Sesame seeds - 1 tablespoon
- Green onions - 2, chopped
- Red bell pepper - 1, thinly sliced
- Cucumber - 1, julienned
- Carrot - 1, julienned
- Soba noodles - 200 grams
Let's Get Started
- Cook the soba noodles according to the package instructions. Rinse under cold water and drain.
- In a large bowl, combine the cooked soba noodles, carrot, cucumber, red bell pepper, and green onions.
- In a small bowl, whisk together the soy sauce, rice vinegar, sesame oil, honey, garlic, and ginger.
- Pour the dressing over the soba noodle mixture and toss to combine.
- Sprinkle with sesame seeds before serving.
