Soba Noodle Stir Fry

  1. Cook the soba noodles according to package instructions. Drain and set aside.
  2. Heat the vegetable oil in a large skillet or wok over medium heat.
  3. Add the minced garlic and grated ginger. Stir fry for 1 minute until fragrant.
  4. Add the sliced bell peppers, julienned carrots, and snow peas. Stir fry for 3-4 minutes until the vegetables are crisp-tender.
  5. In a small bowl, whisk together soy sauce, sesame oil, and honey to make the sauce.
  6. Add the cooked soba noodles to the skillet and pour the sauce over them. Toss everything together until well coated.
  7. Cook for an additional 2-3 minutes until the noodles are heated through.
