Soba Noodle Stir Fry
This delicious soba noodle stir fry is packed with vegetables and tossed in a flavorful sauce.
Ingredients - Serves 2
- Green onions - 2, sliced, for garnish
- Sesame seeds - 1 tablespoon, for garnish
- Honey - 1 tablespoon
- Sesame oil - 1 tablespoon
- Soy sauce - 3 tablespoons
- Snow peas - 1 cup
- Carrots - 2 medium, julienned
- Bell peppers - 1 large, thinly sliced
- Ginger - 1 tablespoon, grated
- Garlic - 2 cloves, minced
- Vegetable oil - 2 tablespoons
- Soba noodles - 6 ounces
Let's Get Started
- Cook the soba noodles according to package instructions. Drain and set aside.
- Heat the vegetable oil in a large skillet or wok over medium heat.
- Add the minced garlic and grated ginger. Stir fry for 1 minute until fragrant.
- Add the sliced bell peppers, julienned carrots, and snow peas. Stir fry for 3-4 minutes until the vegetables are crisp-tender.
- In a small bowl, whisk together soy sauce, sesame oil, and honey to make the sauce.
- Add the cooked soba noodles to the skillet and pour the sauce over them. Toss everything together until well coated.
- Cook for an additional 2-3 minutes until the noodles are heated through.
- Remove from heat and garnish with sesame seeds and sliced green onions.
