- Ginger - 1 teaspoon, grated
- Garlic - 1 clove, minced
- Honey - 1 tablespoon
- Soy sauce - 1 tablespoon
- Rice vinegar - 2 tablespoons
- Sesame oil - 2 tablespoons
- Sesame seeds - 2 tablespoons
- Cilantro - 1/4 cup, chopped
- Green onions - 4, thinly sliced
- Red bell pepper - 1, seeded and julienned
- Cucumber - 1, seeded and julienned
- Carrots - 2, peeled and julienned
- Soba noodles - 8 ounces
