Snow Fungus and Pear Soup
A traditional Chinese dessert soup that is known for its health benefits. It's sweet, refreshing and easy to make.
Ingredients - Serves 4
- Goji berries - 1 tablespoon
- Red dates - 6, pitted
- Water - 2 liters
- Rock sugar - 50 grams
- Asian pears - 2, peeled and cored
- Snow fungus - 50 grams
Let's Get Started
- Soak the snow fungus in water until it expands. Trim off the yellow part and tear into small pieces.
- In a pot, add water, snow fungus, pears, and rock sugar. Bring to a boil.
- Lower the heat and simmer for 2 hours.
- Add the red dates and goji berries in the last 30 minutes of cooking.
- Serve hot or chilled.
