Smoky Tofu and Bean Tacos
These vegan tacos are packed with flavor from smoky tofu and hearty beans. They're perfect for a quick and easy weeknight dinner or a casual get-together with friends.
Ingredients - Serves 4
- Lime - 1, cut into wedges
- Fresh cilantro - For garnish
- Avocado - 1, sliced
- Corn tortillas - 8
- Black beans - 1 can, drained and rinsed
- Cumin - 1 teaspoon
- Smoked paprika - 1 teaspoon
- Garlic - 2 cloves, minced
- Onion - 1, finely chopped
- Olive oil - 2 tablespoons
- Extra firm tofu - 1 block, drained and crumbled
Let's Get Started
- Heat the olive oil in a large skillet over medium heat.
- Add the onion and garlic and cook until the onion is soft, about 5 minutes.
- Add the crumbled tofu, smoked paprika, and cumin to the skillet. Cook for another 5 minutes, stirring frequently.
- Stir in the black beans and cook until heated through.
- Warm the corn tortillas in a dry skillet or in the microwave.
- Fill each tortilla with the tofu and bean mixture. Top with avocado slices and fresh cilantro.
- Serve the tacos with lime wedges on the side.
