Smoked Potato Gnocchi

Ingredients - Serves 4

Let's Get Started

  1. Smoke the potatoes in a smoker until they are soft and fully cooked.
  2. Once the potatoes are cool enough to handle, peel them and pass them through a potato ricer into a large bowl.
  3. Add the flour, egg, and salt to the bowl and mix until a dough forms.
  4. Divide the dough into 4 pieces and roll each piece into a long rope. Cut the ropes into small pieces to form the gnocchi.
  5. Bring a large pot of salted water to a boil. Add the gnocchi and cook until they float to the surface, about 2-3 minutes. Drain the gnocchi and set aside.
  6. Heat the olive oil in a large skillet over medium heat. Add the garlic and sage and cook until fragrant, about 1 minute.
  7. Add the gnocchi to the skillet and cook until they are golden brown, about 5 minutes.
  8. Sprinkle the gnocchi with the grated Parmesan cheese and serve.
