Ingredients - Serves 4
- Parmesan cheese - 1/2 cup, grated
- Fresh sage leaves - 10
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Salt - 1 teaspoon
- Egg - 1 large
- All-purpose flour - 1.5 cups
- Potatoes - 2 large, smoked
Let's Get Started
- Smoke the potatoes in a smoker until they are soft and fully cooked.
- Once the potatoes are cool enough to handle, peel them and pass them through a potato ricer into a large bowl.
- Add the flour, egg, and salt to the bowl and mix until a dough forms.
- Divide the dough into 4 pieces and roll each piece into a long rope. Cut the ropes into small pieces to form the gnocchi.
- Bring a large pot of salted water to a boil. Add the gnocchi and cook until they float to the surface, about 2-3 minutes. Drain the gnocchi and set aside.
- Heat the olive oil in a large skillet over medium heat. Add the garlic and sage and cook until fragrant, about 1 minute.
- Add the gnocchi to the skillet and cook until they are golden brown, about 5 minutes.
- Sprinkle the gnocchi with the grated Parmesan cheese and serve.
