Slow Cooker Chicken Curry
This slow cooker chicken curry is packed with flavor and requires minimal effort. It's the perfect weeknight meal.
Ingredients - Serves 6
- Fresh cilantro - For garnish
- Chicken broth - 1 cup
- Tomato paste - 2 tablespoons
- Coconut milk - 1 can (13.5 ounces)
- Salt - 1 teaspoon
- Cayenne pepper - 1/4 teaspoon
- Turmeric - 1/2 teaspoon
- Cumin - 1 teaspoon
- Curry powder - 2 tablespoons
- Ginger - 1 tablespoon, minced
- Garlic - 3 cloves, minced
- Onion - 1 large, chopped
- Chicken breasts - 4, boneless and skinless
Let's Get Started
- Place the chicken breasts in the slow cooker.
- In a bowl, combine the onion, garlic, ginger, curry powder, cumin, turmeric, cayenne pepper, salt, coconut milk, tomato paste, and chicken broth. Stir until well combined.
