Skordalia
Skordalia is a traditional Greek garlic dip that's creamy, garlicky, and absolutely delicious. It's typically served with bread or vegetables, but can also be used as a sauce for fish or chicken.
Ingredients - Serves 6
- Salt - 1/2 teaspoon
- White wine vinegar - 2 tablespoons
- Extra virgin olive oil - 1/2 cup
- White bread - 2 slices, crusts removed and soaked in water
- Almonds - 1 cup, blanched and finely ground
- Garlic - 6 cloves, minced

- In a food processor, combine the minced garlic, ground almonds, and soaked bread. Process until smooth.
- With the motor running, slowly drizzle in the olive oil until the mixture is thick and creamy.
- Add the vinegar and salt, and process again to combine.
- Taste and adjust the seasoning if necessary.
- Transfer the skordalia to a bowl and refrigerate for at least 1 hour before serving to allow the flavors to meld together.
- Serve the skordalia with bread or vegetables for dipping.
