Pasta al Pesto Di Pistacchio
A delicious and creamy pasta dish with a rich pistachio pesto sauce.
Ingredients - Serves 4
- Black pepper - To taste
- Salt - To taste
- Extra virgin olive oil - 100 ml
- Parmesan cheese - 50 grams, grated
- Garlic - 2 cloves
- Pistachios - 150 grams, shelled and unsalted
- Pasta - 400 grams
Let's Get Started
- Boil the pasta in a large pot of salted water until al dente.
- While the pasta is cooking, make the pesto. In a food processor, combine the pistachios, garlic, Parmesan cheese, olive oil, salt, and pepper. Blend until smooth.
- Drain the pasta, reserving some of the pasta water.
- Return the pasta to the pot and add the pesto. Toss to combine, adding pasta water as needed to thin the sauce.
- Serve the pasta hot, garnished with extra Parmesan cheese and a sprinkle of chopped pistachios.
