  1. Heat the vegetable oil in a large pot or wok over medium heat.
  2. Add the diced chicken breast and cook until browned and cooked through, about 5 minutes.
  3. Add the carrots, celery, mushrooms, and green peas. Stir-fry for 2-3 minutes until the vegetables are slightly tender.
  4. Pour in the chicken broth and soy sauce. Bring to a boil, then reduce the heat and simmer for 10 minutes.
  5. Add the dissolved cornstarch to the soup and stir well. Cook for another 2 minutes until the soup thickens.
  6. In a separate pan, heat 1 tablespoon of vegetable oil over medium-high heat.
  7. Add the cooked rice and spread it out evenly in the pan. Cook for 5-7 minutes, stirring occasionally, until the rice becomes crispy.
  8. Remove the crispy rice from the pan and drain on paper towels.
  9. To serve, place a handful of crispy rice in each bowl and ladle the hot soup over it. The rice will sizzle and create a delicious texture.
  10. Season with salt and pepper to taste.
