Sizzling Rice Soup
Sizzling Rice Soup is a delicious and comforting Chinese soup made with chicken, vegetables, and crispy rice.
Ingredients - Serves 4
- Salt and pepper - To taste
- Vegetable oil - 2 tablespoons
- Cooked rice - 1 cup
- Cornstarch - 2 tablespoons, dissolved in 2 tablespoons of water
- Soy sauce - 2 tablespoons
- Chicken broth - 4 cups
- Green peas - 1/2 cup
- Mushrooms - 8 ounces, sliced
- Celery - 2 stalks, sliced
- Carrots - 2, peeled and sliced
- Chicken breast - 1, boneless and skinless, diced
Let's Get Started
- Heat the vegetable oil in a large pot or wok over medium heat.
- Add the diced chicken breast and cook until browned and cooked through, about 5 minutes.
- Add the carrots, celery, mushrooms, and green peas. Stir-fry for 2-3 minutes until the vegetables are slightly tender.
- Pour in the chicken broth and soy sauce. Bring to a boil, then reduce the heat and simmer for 10 minutes.
- Add the dissolved cornstarch to the soup and stir well. Cook for another 2 minutes until the soup thickens.
- In a separate pan, heat 1 tablespoon of vegetable oil over medium-high heat.
- Add the cooked rice and spread it out evenly in the pan. Cook for 5-7 minutes, stirring occasionally, until the rice becomes crispy.
- Remove the crispy rice from the pan and drain on paper towels.
- To serve, place a handful of crispy rice in each bowl and ladle the hot soup over it. The rice will sizzle and create a delicious texture.
- Season with salt and pepper to taste.
