  2. In a large pot, combine the lemon juice, sugar, and water. Stir until the sugar is dissolved.
  3. Sprinkle the yeast over the mixture and let it sit for 5 minutes to activate.
  4. Cover the pot with a clean kitchen towel and let the mixture ferment at room temperature for 24 hours.
  5. After 24 hours, strain the mixture to remove any sediment or yeast.
  6. Chill the sima in the refrigerator for at least 2 hours before serving.
  7. Serve the sima in glasses, garnished with a few raisins in each glass.
