Sima
Sima is a traditional Finnish drink made with lemons, sugar, and yeast. It is a refreshing and slightly fizzy beverage.
Ingredients - Serves 6
- Raisins - 1/2 cup
- Active dry yeast - 1 packet
- Water - 6 cups
- Sugar - 1 cup
- Lemons - 4
Let's Get Started
- Juice the lemons and strain the juice to remove any pulp or seeds.
- In a large pot, combine the lemon juice, sugar, and water. Stir until the sugar is dissolved.
- Sprinkle the yeast over the mixture and let it sit for 5 minutes to activate.
- Cover the pot with a clean kitchen towel and let the mixture ferment at room temperature for 24 hours.
- After 24 hours, strain the mixture to remove any sediment or yeast.
- Chill the sima in the refrigerator for at least 2 hours before serving.
- Serve the sima in glasses, garnished with a few raisins in each glass.
