Sill
This traditional Swedish dish features pickled herring marinated in a tangy brine.
Ingredients - Serves 6
- Fresh dill - 1/4 cup, chopped
- Red onion - 1, thinly sliced
- Allspice berries - 1 teaspoon
- Black peppercorns - 1 teaspoon
- Salt - 1 tablespoon
- Sugar - 1/4 cup
- Water - 1 cup
- White vinegar - 1 cup
- Herring fillets - 1 pound
Let's Get Started
- Rinse the herring fillets under cold water and pat dry with paper towels.
- In a saucepan, combine the white vinegar, water, sugar, salt, black peppercorns, and allspice berries. Bring to a boil and stir until the sugar and salt are dissolved. Remove from heat and let the brine cool.
- Place the herring fillets in a glass or ceramic dish and pour the cooled brine over them. Make sure the herring is fully submerged in the brine.
- Cover the dish with plastic wrap and refrigerate for at least 24 hours, or up to 3 days for a stronger flavor.
- Before serving, drain the herring and discard the brine.
- Arrange the herring fillets on a serving platter and garnish with thinly sliced red onion and chopped fresh dill.
- Serve chilled and enjoy!
