  1. Preheat the oven to 350°F (175°C) and grease a baking dish.
  2. In a large bowl, combine the flour and sugar.
  3. Add the cold cubed butter to the flour mixture and use your fingers or a pastry cutter to cut the butter into the flour until the mixture resembles coarse crumbs.
  4. Add the beaten egg and vanilla extract to the mixture and mix until a dough forms.
  5. Press two-thirds of the dough into the bottom of the greased baking dish to form the crust.
  6. Spread the fruit filling evenly over the crust.
  7. Crumble the remaining dough over the fruit filling to create the streusel topping.
  8. Bake in the preheated oven for 40 minutes, or until the streusel is golden brown and the fruit filling is bubbly.
  9. Allow to cool slightly before serving. Serve warm or at room temperature.
